I threw these together the other night and they were insanely delicious, though VERY sloppy when first made, more like Chili, lol. I just smothered a slice of toast with it, followed by another piece of toast (which I also smothered). Still very tasty, but they were much better in my opinion after the mixture sat in the fridge for a night.
Drain a can of kidney beans and mash them up in a pot. Leave some chunks. You could also use any other bean that has the same texture as kidney beans.
Add a bit of olive oil, salt and pepper. Heat up on medium.
Once heated, add spaghetti/tomato sauce of your choice (I used some kind of chunky tomato & basil one), as much as you want, just taste as you go along, but don't make it too liquidy. You could even use Manwich mix and just use as much beans as meat indicated on the can.
Heat it all up.
Add some cumin, chili powder and cayenne, to taste.
Bam. Vegan Sloppy Joes.
I was also going to add a little ketchup but forgot. I think that could be good.
